While the Chef’s Apprentice restaurant on HACC’s Harrisburg Campus remains closed due to the global pandemic, Chef Thomas J. Long, CEC, AAC, executive chef at HACC, has been hosting cooking shows for students on Zoom. Documenting recipes from the show became part of the process, and one viewer suggested the creation of a cookbook.

The Chef’s Apprentice Cookbook – available for purchase just in time for the holidays – features over 80 recipes, including appetizers, soups, entrees, salads, side dishes and desserts. Some of Chef Tom’s prize-winning recipes from over the years are also included, such as his often requested crab cake recipe.

Five dollars from the sale of each cookbook will be donated to the Benjamin Olewine III Center for the Study of Culinary Arts and Food Service Management Fund for Excellence. This fund for excellence allows HACC to invest in innovative tools and technology to keep up with the constantly expanding culinary industry.
